LLM pipeline to extract data from receipts and build monthly expense reports

I need someone to build a pipeline that reads receipt pictures and pulls out the data automatically. The idea is simple: I upload a picture of a receipt, and the pipeline uses an LLM to extract the items, the values, and the date. The receipts come from different stores, so the pipeline needs to handle different formats and layouts, not just one template. After the data is extracted, I want a monthly report with the expenses based on all the receipts from that month. What I need: A pipeline that takes a receipt image as input and outputs structured data (items, prices, date, store) It should work across different receipt formats, not just one store A way to store the extracted data (a database or a spreadsheet, open to suggestions) A monthly report generated from that data, showing total expenses and a breakdown by item or category Nice to have: Some way to review or correct the extracted data in case the LLM gets something wrong A simple interface to upload receipts (doesn't need to be fancy)
