MacOS Python versions help

I want to install Espressif-IDE which requires Python 3.13. I tried to install it via Homebrew, but that installed Python 3.15 as a dependency. When I've tried to install Python 3.13 via Homebrew and EIM still doesn't see the correct version. I've tried to install python versions via UV (https://docs.astral.sh/uv/) installed via Homebrew. UV has installed 3.13 but I can't figure out how to point EIM at the correct version of Python. At this point there may be multiple versions of Python managed by different package managers, and my $PATH is a bit of a mess. I need help cleaning up the different installs and $PATH. I would like to learn how to correctly mange Python and it's versions. You will recommend a strategy and package manger for python and make sure I can get the IDE installed.
