Build Local Game Data Table

I need someone to create a local data table I can open on my PC that pulls data from a mobile or PC game using TCPDUMP or another network packet analyzer of their choice. The goal is to capture relevant game-related network traffic, extract useful information, and organize it into a usable table format. Please share your approach, tools you would use, and how you would structure the final output for easy local access.
