Convert PDF Tables to Excel

I have a collection of PDFs—somewhere between 11 and 50 tables in total—that I need transferred into a clean, well-structured Excel file. The twist is that the tables aren’t laid out the same way on every page; column order, merged cells, or header placement can change from one table to the next...
