Copy Digital Text to Excel

I have several PDF and Word files that contain plain text tables and paragraphs which I need reorganised inside a clean .xlsx workbook. The data must be split across multiple sheets in a logical way—think one sheet per chapter, category, or section header that appears in the original documents...
