Re-key PDF Data into Excel

I have a collection of typed PDFs—each anywhere from 11 to 50 pages—that I need transcribed into clean, well-structured Excel workbooks. The scans are clear, so this is strictly a re-keying and double-checking task; there are no tables, charts, or other special layouts to worry about...
