Convert PDF Tables to Sheets

I need the financial tables contained in a set of PDFs copied into Google Sheets so I can run my own analysis. Accuracy is critical: every figure, header, subtotal, and note must match the source, and the row / column structure should look exactly as it does in the PDFs...
