Lovable app to full developement

I’m looking to build a voice-first AI app for winemakers, designed to be used hands-free in the cellar. It would help winemakers with formulas and additions, track lots and fermentations, manage cellar inventory, and integrate with select winery platforms via API. I’d like to initially build it as a mobile-friendly web-based SaaS application, but architect it so it can later be converted/expanded into native iOS and Android apps without rebuilding the core platform. I’ve attached a more detailed Phase 1 scope of work. At this stage, I’m looking for your estimated development hours, approximate cost, timeline, recommended tech stack, and any areas of the scope you would suggest simplifying for the initial MVP.
