PHP Update on 2 Wordpress Sites

I am looking for someone with experience updating Wordpress sites. I have two websites that have outdated PHP and need updating. I utilize Cloudflare and WP Engine for these. Note that the designs themselves and sites are outdated, but I am only looking for PHP updates to keep the sites secure. Please share experience in updating sites, plugins and fixing general site health.
